Cultural Story
ICHIDŌ is crafted using traditional bottle fermentation — champagne-style secondary fermentation — at Fukushima's Ninki Shuzo, the brewery behind Ninki Ichi / 人気一. The bubbles develop naturally in the bottle over time rather than being added, which is what separates it from tank-carbonated sparkling sake and what a buyer is paying for.

THE MAKER
Ninki Shuzo — Nihonmatsu, Fukushima
Ninki Shuzo is a sake brewery in Nihonmatsu, Fukushima, working batch by batch with a long-standing focus on careful, controlled brewing.
Fukushima is a prefecture in northeastern Japan, shaped by mountains, rivers and long winters — conditions that demand patience and reward precision.
The brewery is known for discipline, consistency and technical depth — the qualities that both premium sake and fine sparkling expressions depend on. Fermentation is allowed to unfold in time rather than being forced.
That environment and that philosophy make Fukushima — and Ninki Shuzo — a natural home for sake that values clarity, balance and restraint.

Exploring the ICHIDŌ Expressions
Each ICHIDŌ expression explores a different balance of aroma, texture and finish. Some lean gently sweet and expressive, others are drier and more restrained. What they share is clarity, fine natural effervescence, and a profile that works at the table.
Common to all expressions: 300 mL (Yuzu 500 mL) · 12 bottles per case · chilled, keep below 10 °C · rice and rice malt of Japan (Yuzu adds water, yuzu and saccharide) · Order quantity and MOQ are confirmed with the supplier at quotation. The cards below show only what differs between them.
